De esta manera se difundió más allá de los confines locales, un queso fácil de transportar, que se conserva durante largo tiempo y de un sabor fuerte pero no picante: el Parmesano.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;Hoy en día, la zona de producción comprende Reggio Emilia, Parma, Módena, Bolonia (zona occidental del rio Reno) y una parte del territorio lombardo del Oltrepo’ Mantovano.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;La receta de la elaboración del Parmesano sigue siendo la de los orígenes, que utiliza la leche de dos ordeños (el de por la mañana y el de por la tarde) de bovinos alimentados únicamente con forraje local.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;La leche se elabora cruda, para mantener sus preciosas características nutritivas y, más tarde, después de haber añadido el cuajo de ternera, se cuece a 55º C y se deposita en los moldes que le darán su forma característica.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;Las “formas” de Parmesano que se obtienen pesan entre 25 y 40 Kg y tienen que pasar por un proceso primero de saladura y después de maduración, que puede durar desde 12 meses, para el parmesano de mesa, hasta 36 meses para el parmesano de calidad excelente.&lt;/div&gt;&lt;div align="justify"&gt;&lt;br /&gt;Los sellos y marcas de garantía del Parmigiano-Reggiano representan una verdadera certificación de la autenticidad del producto ( D.O.C.) y una ayuda a una mejor cualificación del mismo.
